Sweet potato corn bread
Course:
A tasty corn bread with the added bonus of sweet potatoes.
Ingredients:
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1⁄2 cup sugar
- 3 sweet potatoes , boiled until soft, drained and mashed to make 16 oz. of mashed sweet potato
- 2 eggs
- 6 tablespoons milk
- 3 tablespoons oil
Directions:
Mix together the dry ingredients in one bowl and the wet ingredients in a separate bowl. Add the wet ingredients to the dry and mix just until combined. Bake in muffin tins at 425 for 15-20 minutes.
