Sweet potato corn bread

A tasty corn bread with the added bonus of sweet potatoes.
  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1⁄2 cup sugar
  • 3 sweet potatoes , boiled until soft, drained and mashed to make 16 oz. of mashed sweet potato
  • 2 eggs
  • 6 tablespoons milk
  • 3 tablespoons oil

Mix together the dry ingredients in one bowl and the wet ingredients in a separate bowl. Add the wet ingredients to the dry and mix just until combined. Bake in muffin tins at 425 for 15-20 minutes.
