Sushi nori

Course: 
Vegetarian sushi is really easy to make and everything you need, you can get at the grocery store. The leftovers also make a tasty rice bowl.
Ingredients: 
  • 1 package nori sheets
  • Soy sauce
  • 2 c.sushi rice
  • 2 1/4 c. water
  • 1/4 c. rice vinegar
  • Julienned vegetables including: carrots, cabbage, meat radishes, spinach, cucumbers, avocado, turnip, kohlrabi, baked sweet potatoes
  • 3 eggs
  • Sesame seeds
  • Pickled ginger and prepared wasabe
Directions: 

Cook sushi rice on low head in water until water is absorbed and rice is tender. Keep covered and let sit for 10 minutes. Mix vinegar, salt and sugar together and then pour over rice. stir rice gently until mixed.
While rice cooks, scramble eggs and fry as an omelet. When cool, slice into strips.
To roll sushi:
Cover sheet of nori with thin layer of rice except top two inches. Place fillings at bottom then roll up. Moisten nori at top and seel the rool by squeezing. Slice roll into 6-8 pieces with a moistened knife edge. Sprinkle pieces with sesame seeds and serve with soy sauce for dipping, pickled ginger and wasabe.
