Salsa

Course: 
This is a great recipe for eating fresh or canning! If you are not familiar with canning, make sure to read up on it before attempting. Its not very difficult but you want to make sure you do it right to avoid spoilage.
Ingredients: 
  • 10 c. chopped tomatoes
  • 5 c. chopped peppers
  • 2 1/2 c. chopped hot peppers
  • 5 c. chopped onions
  • 1 1/2 c. cilantro
  • 15 bulbs garlic, minced
  • 2 tsp. oregano
  • 1/2 tsp.cumin
  • 1 1/4 cider vinegar
  • 3 tsp. salt
Directions: 

Dice tomatoes by hand. All other vegetables can be chopped in cuisinart. Mix in thick bottomed pot on stove on medium flame. Add remaining ingredients and boil for 10 minutes or so. Salsa can then be canned in a 15 minute hot water bath.
