Roasted Bok Choi

This recipe can be used with baby bok choi or with larger bok choi. Great as a side dish to pork or fish.
  • 1-2 bok choi or 16 oz baby bok choi
  • 2 tbs olive oil
  • salt and pepper to taste
  • lemon zest (optional)

Heat oven to 400-450, or you can use your broiler if you have a good hot one. Halve the bok choi. Toss with a bit of olive oil and kosher salt and pepper to taste. Spread bok choi in single layer on cookie sheet. The oil should keep them from sticking to the pan, but to be safe you can use parchment paper. Roast until leaves are crispy and beginning to blacken and the body is slightly tender. Remove and season with lemon zest or your favorite seasoning.
