Mock Lasagne

Course: 
As with a regular lasagne, this one can be made in a large batch and frozen. It's a great way to enjoy zucchini/summer squash all winter!
Ingredients: 
  • summer squash and/or zucchini
  • your favorite pasta sauce
  • riccotta, mozarella, parmesan cheeses
Directions: 

Slice squash or zucchini either cross-wise or length-wise in 1/8-1/4" thickness. Substitute for the pasta in your favorite lasagne recipe.
The squashes take less time to cook than the pasta, but if you're careful with cooking time, they won't get too soft (freezing and thawing tends to make them softer, too)
