Middle Eastern Rice and lentil pilaf

This is a simple,nourishing comfort food.
  • 1/4 c. vegetable oil
  • 3 lbs. yellow onions sliced thin
  • 3 tsp. kosher salt
  • 1/2 c. white wine
  • 6 c. cooked rice
  • 3 c. brown or green lentils, cooked until tender but not falling apart
  • 1/4 tsp. cinnamon
  • 1/4 tsp. ground cumin
  • freshly groud pepper
  • 1 handfull chopped parsley
  • sea salt

1. Heat oil on medium low and add onions and 2 tsp. salt, cook until very oft ad browned, about 45 minutes. Pour in white wine and stir and scrape to deglaze pan.
2. Fold rice, lentils, spices, half the onions, a grind of pepper and 1 tsp. salt.
3. Serve rice mixture with remaining onions on top sprinkled with parsley.
