Ginger Miso dressing

Course: 
One of our favorite dressings for our salads. We sub in mayo for the yogurt when we don't have it on hand and its delicious.
Ingredients: 
  • 1 rounded tablespoon white or yellow miso
  • 2 tablespoons seasoned rice vinegar, or 1 tablespoon rice vinegar and 1 tablespoon fresh lime juice
  • ½ teaspoon grated fresh ginger
  • 1 small garlic press, minced or put through a press
  • Pinch of cayenne
  • 2 tablespoons dark sesame oil
  • 2 tablespoons peanut oil or grapeseed oil
  • 2 tablespoons plain low-fat yogurt
Directions: 

Mix all ingredients. We use a hand held blender. Serve on a bed of fresh spring lettuce.
