Fresh Summer Salsa

Course: 
A raw, fresh salsa that compliments just about any meal!
Ingredients: 

2 ears of corn, not cooked
2 roma tomatoes
1 medium purple onion
1 yellow bell pepper
1 tablespoon freshly ground pepper
2 teaspoons salt
3 teaspoons ground cumin
6 garlic cloves, minced
1 lime, squeezed
1 lemon, squeezed
1 small bunch cilantro
2 jalapeno peppers, chopped

Directions: 

Combine all vegetables, except the corn, in a food processor and pulse until chopped
Remove corn from the cob and add to chopped vegetables
add seasons (salt, pepper, cumin) and freshly squeezed lime juice
mix until well blended. Cover with plastic wrap and let it sit in the refrigerator for 30 mins.

Here are a few dishes I've used this salsa with:

Add 1.5 pounds of ground beef to the salsa and cook until beef is cooked to make an awesome taco filling!
Add to a salad
Cook sirloin tips until they reach an internal temperature of 130. Slice thin, heat up corn tortillas. Add sirloin and salsa to make a delicious taco.
Eat with freshly made tortilla chips!
