Fresh Bruschetta

Course: 
In late summer when cucumbers and tomatoes abound, I make this refreshing snack everyday.
Ingredients: 
  • 2-4 slicer and/or cherry tomatoes diced 
  • 1/2 diced purple onion
  • 2 diced cucmbers
  • 1 avocado diced
  • 2 Tbs balsamic vinegar
  • 2-3 Tbs good olive oil
  • Handful fresh chopped basil
  • Salt and pepper
Directions: 

Combine all ingredients and adjust seasonings if necessary. Enjoy with a nice crusty bread.

4-6 servings
