Carrot Halwa
Course:
This hearty Indian dessert can be served warm or cold. Ghee is a type of butter that can be purchased online or at your local international market.
Ingredients:
- 6 big carrots
- 1 1/2 cups of sugar
- 1/2 tsp cardamom
- pinch saffron
- 1 1/2 cups milk
- 1/2 cup powdered cashew
- 3 tbs ghee
- roasted nuts and raisins (garnish)
Directions:
Peel and grate carrots. Heat 3 tbsp ghee in a wide pan, roast the nuts until golden brown and set aside. In the same pan, add grated carrots, cardamom and saffron and saute for 2 minutes. Add milk and let it cook on low for 40-45 minutes until all milk is absorbed and the mixture becomes thick. Add sugar and cook for 5 minutes. Add cashew powder and mix well. Simmer for 5 minutes. Garnish with roasted nuts and raisins and enjoy!
