Basil-Mint Cucumber and Pea Salad

Course: 
These herbs complement each other and the result is a super salad. Great for BBQ's or picnics!
Ingredients: 
  • 2 cups seeded, chopped, peeled cucumbers
  • 1/2 cup peas (fresh, cooked and cooled; or frozen, thawed)
  • 2 tbs chopped fresh basil
  • 1 tbs chopped fresh mint
  • 3 tbs greek yogurt
  • 1/8 tsp salt, or to taste
  • Freshly ground black pepper, to taste
Directions: 

In a medium bowl, toss together the cucumbers, peas, basil and mint.
In a small bowl, stir together the yogurt and salt. Pour the dressing over the salad, grind pepper on top and toss to combine.
