Green Beans
Green beans are one vegetable that must be eaten fresh from the farm. Grocery store beans just don't cut it. Beans are available in high summer.

Storage tips:
Store in a bag in the fridge. Beans freeze well but should be blanched before freezing. Boil a pot of water and prepare beans (removed ends and cut into pieces). Prepare a cold water bath with ice. When water boils, place the beans into water for about a minute or two. Remove beans and place in cold water bath until cool. Put in freezer bags, remove as much air as possible and freeze.

Green beans can be eaten fresh, steamed, sauteed, pickled or put in a casserole!
