Escarole
Escarole is grown as a head like lettuce. It is a lovely fall green known for its use in Italian cooking. Escarole tends to be hearty with a light bitterness that sweetens with fall frosts.

Cooking tips:
The whole leaves of escarole can be used in cooked greens dishes. The ribs are crisp and sweet and make an excellent fall salad.
