Radishes are a staple across Asia.  Daikon radishes accounts for 15 percent of total vegetable production in Japan.  These long white appendage have a spicy crunch and are good raw or cooked.  These radishes are available in the fall and are great in fall salads.

Storage tips: 

Daikon can be wrapped and stored in the fridge for a couple weeks.  For longer winter storage, they can be stored dirty in grain sacks in a cool humid area.

Cooking tips: 
Daikons may need a little scrubbing, but there is no need to peel them. They are great pickled, raw, or sliced into stir-fries and soups.
