The first cucumber was cultivated in India over 3,000 years ago and are now used in many cultures in raw and pickled form. Cucumbers are a light cool vegetable perfect for their arrival in hot July. They are available from July through August.

Storage tips: 

Store cucumbers in the fridge for up to one week. Once cucumbers have been cut, they will deteriorate quickly. Cucumbers can be stored for up to a year when made into pickles.

Cooking tips: 
Cucumbers are great fresh in salads and for snacking. They complement warm dishes in the summertime. Dark green slicing cucumbers are great for salad. Pickling cucumbers, also delicious fresh, are typically used to make pickles because they are lower in moisture then the slicing cukes.
