These awesome healthy fries are an interesting alternative to the usual potato french fries. They are also very versatile, as they can be served with ranch, maple butter, ketchup, whatever you prefer!
- 4-5 peeled and jullienned parsnips
- olive oil
- salt and pepper
- dried herbs (optional)
Coat the julienne parsnips in olive oil and sprinkle with salt, pepper, and herbs. Place in a hot oven at 400F and bake for about 25-40 mins, moving them around after about 15 mins. The parsnips are done when they have golden blisters, and are easily pierced with a fork.
