Kale is one of the most nutritious vegetables out there. Lucky for us, its extraordinarily versatile as well and can be used in practically every meal. We grow several varieties: lacinato, curly, red russian, etc. Kale is available all season long.
Store kale in a bag in the fridge.
Kale freezes wonderfully. Chop up and blanche. Cool in ice water and place in freezer bags and you can have it all winter long. Alternatively, prepare kale as you like it and freeze it. Then defrost it, warm it up and you have a convenient side dish.
