Fennel is in the Umbel family and related to carrots, celery, parsley and dill. It is well known in Mediterranean cuisine. It has a distinctive anise flavor.
Fennel can be stored in the refrigerator for up to two weeks.
Fennel should be washed carefully because the bulb layers can trap grit. The fennel bulb can be eaten fresh, sliced into salads. Fennel can be used in all sorts of dishes and the feathery leaves make an excellent soup stock ingredient.
