Eggplants are in the Solanum family and are related to peppers, tomatoes and potatoes. Although most think of the eggplant as large and dark purple, there are many varieties ranging in appearance from small oblong and green, to the long and skinny light violet Asian varieties. Eggplants are a warm weather crop, available in August.
Eggplant is best used fresh. Store in the fridge for up to a week. Eggplant does not freeze well. Cooked eggplant dishes such as baba ghanouj and breaded and fried eggplant can be frozen.
